Hummus is a delicious spread (or dip) made from chickpeas, tahini, lemon, and spices. It is a popular dish in the Middle East and the Mediterranean.
Ingredients
1 can (15 ounces) of chickpeas (garbanzo beans), drained and rinsed
1/4 cup fresh lemon juice (about 1 large lemon)
1/4 cup well-stirred tahini
1 small garlic clove, minced
2 tablespoons extra-virgin olive oil, plus more for serving
1/2 teaspoon ground cumin
Salt to taste (about 1/2 to 1 teaspoon)
2 to 3 tablespoons water
Paprika, for serving (optional)
Fresh parsley, chopped, for serving (optional)
Preparation
Step 1
Prepare Chickpeas:
If you prefer a smoother hummus, peel the chickpeas by gently rubbing them between your hands and discarding the skins.
Step 2 Blend Ingredients:
In a food processor, combine the tahini and lemon juice. Process for about 1 minute until creamy and well-blended.
Add the olive oil, minced garlic, cumin, and a pinch of salt to the tahini and lemon juice mixture. Process for another 30 seconds to 1 minute until well-mixed.
Step 3 Add Chickpeas:
Add half of the chickpeas to the food processor and blend for 1 minute. Scrape down the sides and bottom of the bowl, then add the remaining chickpeas and blend until thick and smooth, about 1 to 2 minutes.
Step 4 Adjust Consistency:
With the food processor running, slowly add 2 to 3 tablespoons of water until the hummus reaches your desired consistency. Taste and adjust salt, lemon juice, or tahini as needed.
Step 5 Serve:
Transfer the hummus to a serving bowl. Drizzle with a little olive oil and sprinkle with paprika and chopped parsley, if using.
Serve with pita bread, fresh vegetables, or as a spread on sandwiches.
